清炒白瓜片 Stir Fried White Melon Slices


Hi there! Today I would like to show all of you a very simple dish - Stir fried white melon slices.
White melon is one of my favourite Chinese melon. It can make a nice dish by simply stir fired with garlic.


This is local white melon which I bought from a wet market today. I peeled off the skin completely in order to ensure a smooth and soft texture when eating.


Heat a pan and add oil, salt and garlic and then white melon slices. Stir fry them for a while, add some water and Chinese yellow wine. Continue to stir fry until the water and wine was absorbed by the melon and evaporated and the white melon slices have reached the softness that your prefer.


Turn off the fire and this simple dish is ready to serve. It is delicious, enjoy!

節瓜海味四大天王湯 Hairy Melon Dried Seafood Soup


呢個湯用節瓜用乾海味煲,冇落肉,冇落雞腳之類。真係海味湯。


海味包括:鱆魚、螺頭、淡菜、瑤柱,共「四大天王」。另配以:漳洲雪耳、冬菇、花生、南北杏、蜜棗、陳皮。


用本地節瓜,我用咗個半,留返半個可用嚟整味節瓜炒蛋。


出動埋個紫砂煲!添加入廚樂趣!

無殻茶葉蛋 Chinese Tea Soup Eggs Without Shell



茶葉蛋多數連殻整,我今次就剝咗殻先整,製成品似鹵水蛋,食時唔駛剝殻,啖啖肉!

煮蛋浸蛋嘅材料可以自由配搭,分量我冇定準,呢次用咗:大紅袍茶葉、八角、糖、鹽、鮮露、雞粉。

我嘅做法係先將蛋用水烚熟,再剝殻,然後先用汁料反復煮浸幾次,再放涼後放入雪櫃浸一日。可凍食,可翻熱食。

我試過用街市平價蛋同超市泰國蛋整,效果都一般,平價蛋冇質感,易散。泰國蛋冇香味。呢次用嘅係星加坡蛋,效果較好,口感實淨彈牙,味道較香。
