番茄紅衫魚

整番個麻甩佬送先。



紅衫魚2條15元,幾新鮮架,兩條野仲係眼仔碌碌架。番茄3個5元。


做法:


1 紅衫魚清洗乾淨,修剪魚鰭,用粗鹽醃勻放入雪櫃備用。


2 番茄3個切粗粒備用。


3 煎紅衫魚:索乾晒水先好落鑊煎呀。紅衫色水其實幾靚架。


魚煎好上碟。爆番茄:落糖、鹽、胡椒粉、豉油、生粉煮成茄醬。


魚回鑊半炆煮一陣,即可上碟,加少少芫茜整色水。

  2. 隻鑊要好乾淨,燒到好熱,落油搪勻。放魚後,較細D火,唔好心急鏟佢,由得佢中火慢慢煎,佢會自然離鑊,再反另一面煎。

    Throw them back to the sea!!! Shouted by American Sea Captain.

    Several Years ago, when my 2 nephews were studying in Canada,visited me. I took the younger one to do target shooting & Pacific Ocean deep sea fishing. Garry hooked up several small white sea bass, was about to put them into the bag, then the captain's assistant stepped in & ordered my nephew to throw all those small fish back into the sea. California Marine law only allows you to take those fish which are longer than 8 inches, or throw them all back to the ocean. I believe the fish you were frying would be ordered to throw back to the sea, too short. When I was in HK attending the secondary school, I used to fish this kind of 泥鯭魚 at the piers. Please give them a chance to grow.
