油麥菜炒豆豉鯪魚 Fried Indian Lettuce with Dace and Preserved Black Bean


油麥菜一斤,豆豉鯪魚一條(連豆豉約一湯匙),薑絲適量。



油麥菜洗淨,切頭切尾,只留中間部分,再切度。


豆豉鯪魚用手撕開,摘去魚鰭同中間的骨。


落油燒熱鑊,落薑絲、豆豉爆香,校中火,落鯪魚炒香兜起。


再燒熱鑊,落油麥菜快炒,灑少少鹽、雞粉、贊酒,炒至八九成熟時將鯪魚回鑊炒勻,即可上碟。


油麥菜好易熟,忌腍身,可以俾佢「碟上熟」,食時岩岩好。

  9. 阿太你好,發明呢個菜既人,可能係覺得豆豉鯪魚太肥太多油,要搵D青菜中和下,咁咪俾佢撞正囉,佢揀中油麥菜,都算佢係天材勒。
    我未試過炒涼瓜呀,下次食淨豆豉鯪魚試下先。

  11. 我通常食豆豉鯪魚就係豆豉鯪魚,食唔晒放入雪櫃,放耐左就會掉左算。今次係咁岩諗起可以炒油麥菜乍。我其實中意食岩岩蒸好既熱辣辣既豆豉鯪魚多D。

    Just 2 years ago, this kind of canned Black Bean 鯪魚 were sold for only U$0.65/per can. Since the FDA( Food & Drug Administration) banned the importation of alive 鯪魚 & San魚, then this kind of canned fish are sold for almost U$2.99. Forget it, Buddy, this old man prefer to cook other kind of fish like the Ray, & our farmed Talepia.
    Tuna, & Sword Fish were already found to have been absolved too much Industrial Chemicals in our oceans by the CDC (Center for Disease Control), we have only to turn to farmed fishery industry for our supply.

    This China made canned black bean dace is still very very popular in Hong Kong. But the price is rising very fast and the salty oily fried dace is "unhealthy food". Though it taste quite good, I usually just eat a little bit. haha.
